Someone wants coffee at 8:30.

Another person appears at 10:15 asking if breakfast has started.

Two guests are already in the pool.

If fifteen friends are recovering from the previous night and people may appear anywhere between 9:00 and 11:00, the menu needs more flexibility.

Neither is better.

Juices.

They are useful because the first person downstairs does not necessarily need to wait for the entire group before having something.

That does not mean putting everything outside at 8:30 and leaving it there until noon.

It means choosing foods whose service can be managed progressively.

Finish in Batches

This is the middle ground.

Examples could include:

Chilaquiles components.

Breakfast potatoes.

Warm tortillas.

Imagine eighteen guests.

Three want scrambled.

Two want fried.

Four want omelettes.

Someone asks for egg whites.

Someone wants poached eggs.

One guest wants no eggs at all.

Then half the requests arrive fifteen minutes after the others.

It can be done.

But it changes the kitchen plan.

And it can be.

But the pool changes how we think about the service.

There is heat.

Direct sun.

People are moving between tables and water.

Food may stay outside longer.

Drinks need constant ice.

Wet guests are moving around the service area.

That makes food holding particularly important.

Mexico’s official NOM-251-SSA1-2009 specifies that prepared hot foods ready for service should be maintained above 60°C, while cold prepared foods should be held at 7°C or below. It also states that foods should spend as little time as possible exposed to ambient temperature during preparation and handling.

That is one reason we would rather replenish certain poolside foods in smaller quantities than put one enormous spread outside and hope everybody eats at the same speed.

Yogurt does not need to sit beside the pool all morning.

Neither do egg dishes.

Nor does a huge platter of cut food automatically become better because there is more of it.

Good brunch catering Cancun should make the display work around safe service, not choose food safety around the photograph.

Coffee Is Not a Side Note

At dinner, coffee may be optional.

At brunch, coffee is infrastructure.

For a larger group, think beyond:

“The villa has a coffee machine.”

How quickly does it make coffee?

How many cups can it produce?

Is everybody drinking regular coffee?

Do we need decaf?

Milk?

Non-dairy alternatives?

Iced coffee?

Extra cups?

Where is the coffee station positioned?
